We are getting ever so close! The merlot has finally completed initial fermentation. We are waiting for the cap of grape skins to fall before we press and initiate malolactic fermentation. This is a secondary ferment that will round out the flavors and make for a nice balanced wine. In about three weeks it will be ready for the barrels we just purchased, which will be placed on our new racks!! Meanwhile, on the farm, the cab is slowly getting there. Looks like Saturday will be our day. With daytime temps of 70 and nighttime temps of 45, this is an optimal situation to allow the cabernet a little extra hang time to develop a complex and huge fruit bomb!! The waiting is hard, but I know it will all be worth it! Crossing fingers weather continues to hold out. Looks like 2018 is shaping up to be a fantastic harvest for Kahal Family Vineyards!
